Today, when we dream of the Caribbean, we should thank Mr. Robert Louis Stevenson for writing a novel that spoke of a cook’s adventures on the high seas, pirates, buried treasure and most importantly, the friendships made along the way. Our journey to Iguana Isle began just down river from the historic Inn that inspired Robert Louis Stevenson to write the book Treasure Island.  Tybee Island, Georgia is the namesake for our very first seasoning blend, Tybee Island Barbecue Rub, for this very reason.  If you set sail past the Tybee Island lighthouse and head south, you will eventually pass Amelia Island, Florida. Here you will find blackened Redfish, which inspired our Amelia Island Blackening Spice blend, served at many of the local restaurants.

We could not recognize the importance of a great blackening seasoning without recalling youthful adventures in the Bayous along the Gulf Coast. The ingredients and flavors that inspired Canary Island Cajun Seasoning are served on some of the best steaks you'll find in New Orleans.  Delacroix Island Creole Seasoning was inspired by our love of red beans & rice, boiled Crawfish and the Creole cooking you can only find in the small towns and Bayous along the coast of Louisiana.

Bayou La Batre, Alabama is where we first set our eyes upon the Gulf of Mexico and the abundant seafood taken from her waters. Many warm summer evenings have been spent with a hurricane lamp in one hand while chasing Blue Crab, Stone Crab and the occasional Soft Shell Crab to go with fresh oysters and shrimp. Bayou La Batre Crab Boil Seasoning is a tribute to those friends who make their living on the seas from this very port. 

Dreams of adventure pounded into our psyche from countless hours of listening to Jimmy Buffett albums caused us to continue heading South on A1A to the treasure at the end known  as Key West, Florida. Key West is a blend of island cultures, nomads and legends that would inspire the most rigid of conformists to shed their inhibitions and dance, drink, sing and eat into the wee hours of the morning. Cayo Hueso Caribbean Style Wing Sauce was invented during such an occasion. It has inspired hundreds of people to quit frying their chicken wings and enjoy the flavors of the tropics that no other wing sauce out there provides.

The next step in the evolutionary process of getting to Iguana Isle is to actually venture from the USA and discover what "Island Time" is all about. Perhaps it's a Caribbean Cruise, the dream of relaxing on a remote tropical island or the travel brochures of an all inclusive vacation resort package to a place such as Trinidad and Tobago, Barbados, Grand Cayman, or even the Virgin Islands, that contain pictures of crystal clear water and white sand beaches that has you longing to head south. Without doubt, you will at some point, end up sitting at the airport in Montego Bay, Jamaica eating Jerk Chicken with Pigeon Peas and Rice while sipping rum drinks such as Hurricanes and Pina Coladas, somewhere in the process. This is an activity that seems to happen to everyone we know, so we decided to duplicate that recipe upon our return home from just such a trip and Boston Beach Jerk Seasoning was born. Should you be headed on your way to spend a week in Ocho Rios, Jamaica to take a day trip to go diving in Runaway or Discovery Bay, you'll run into island time quickly!  Runaway Bay Lobster Seasoning and Alice Shoals Jamaican Style Curry Powder were named after those experiences in Jamaica.

It was a week spent on the island of St. Lucia in the West Indies that inspired Marigot Bay Mango Barbecue Sauce. The story of our creations continues with Loggerhead Bay, Santa Isabel Mole, Santa Catalina Guacamole, South Padre Island Chicken and Santa Cruz Island Steak Seasonings all being influenced by various trips to the Islands.  As our adventures continue to add up, so will our products.
